Chickpea Crumbed Air Fryer Onion Rings

 

1 large sweet onion

½ cup Get Farmed! Chickpea Flour

1/2 cup cornstarch

½ teaspoon garlic powder

¼ teaspoon paprika

1 ¼ teaspoons salt to taste

1/2 teaspoon pepper

5 tablespoons ground flax, mixed with 15 tablespoons water and left to sit for 3-5 minutes

1 ½ cups Get Farmed! Chickpea Crumbs

Extra Virgin Olive Oil spray

For Serving:

Vegan mayonnaise

Salt flakes

 

Prepare onion: Slice the onion into rings about 6mm to 12mm thick.

Mix flax slurry: In a small bowl, mix ground flax with water. Stir well and let sit for 3-5 minutes until it becomes thick and gel-like.

Mix coating mixture: In a medium bowl, whisk together the chickpea flour, cornstarch, garlic powder, paprika, and salt.

Prepare crumb coating: Place the Chickpea Crumbs in a third bowl.

To save on the clean up, place a perforated parchment paper liner or a silicone liner in the air fryer basket.

Coat onion rings: Dip one onion ring first in the flour mixture, then in the flax mixture, and then in the Chickpea Crumbs. Place the coated onion ring in the air fryer basket. Repeat with as many onion rings as you can fit without overcrowding (you may have to cook in batches). Spray the onion rings with the Extra Virgin Olive Oil.

Cook at 180°C for 6 minutes in the air fryer, flipping halfway through and spraying again with the oil, until the onion rings are golden brown and crisp.

Serve: Drizzle with vegan mayonnaise and salt flakes.
